Sonoma County is a grain-to-glass distillery, with everything done in house, using alembic pot distillation. This wheat-focused whiskey uses a mashbill that is primarily unmalted wheat and malted rye. It is aged in used rye whiskey barrels.

"This has the black tea-like bitter, spicy and floral flavors of their rye whiskey, mixed with some sweet Wheaties cereal notes. It's got that fire of youth and tastes like it could have been mellowed out a bit more in the barrel. But with some ice it tones down nicely."
