Sonoma County Distilling rejoices in their grain-to-glass technique, with everything done in house, using alembic pot distillation. This 100% rye (both malted and unmalted) is aged in new, charred oak casks, and is then finished in used casks for mellowing. Note: This product has been discontinued and replaced with a flagship 93 proof rye known as Sonoma Distilling Company Sonoma Rye, complete with new label and bottle design. Tasting Notes

"Floral, tart and slightly tannic, almost like a green tea with a drop of lemon squeezed in. A light, kind of gossamer style, with honeycomb, pine cone, cedar and sweet spices. Some vanilla, caramel and black pepper in the finish. No age statement, but doesn't taste overly "young" as many upstart whiskeys can."
