Sonoma County Distilling rejoices in their grain-to-glass technique, with everything done in house, using alembic pot distillation. This 100% rye (both malted and unmalted) is aged in new, charred oak casks, and is then finished in used casks for mellowing.

RyeUnlike bourbon, rye whiskey can be made anywhere in the world. But if made in the US, the mash bill recipe must be at least 51% rye and it must be aged in new, charred oak barrels with no age requirement. Elsewhere, the rye whiskey will be made keeping the country of origin's rules regarding the recipe and minimum aging.

Tasting Notes
"Floral, tart and slightly tannic, almost like a green tea with a drop of lemon squeezed in. A light, kind of gossamer style, with honeycomb, pine cone, cedar and sweet spices. Some vanilla, caramel and black pepper in the finish. No age statement, but doesn't taste overly "young" as many upstart whiskeys can."
