The mash bill includes 80% unmalted Canadian rye, 10% malted barley smoked with cherrywood (hence, the name), and 10% unmalted Canadian wheat. Double-distilled in traditional Alembic pot stills, the whiskey is aged for at least a year in oak from Minnesota and Missouri with a 3rd degree char before being bottled at 48% ABV.

RyeUnlike bourbon, rye whiskey can be made anywhere in the world. But if made in the US, the mash bill recipe must be at least 51% rye and it must be aged in new, charred oak barrels with no age requirement. Elsewhere, the rye whiskey will be made keeping the country of origin's rules regarding the recipe and minimum aging.

"Though young, the whiskey does not have much of that telltale "green" flavor. Instead, it's smooth and creamy, with puffs of sweet smoke (think bacon) providing additional kick. Cocoa, shortbread, cinnamon, nutmeg and allspice tie it all together with a touch of grassiness. "
