Starward Octave Barrels (Yalumba The Octavious)
Octave Barrels is an Australian single malt from Starward which is aged in shiraz red wine barrels. In more detail, the barrels held Yalumba The Octavious, an old vine shiraz from the Barossa Valley in South Australia. Yalumba, the oldest family-owned winery in Australia, has its own cooperage and they crafted these 100L octave barrels from American oak to age this wine.
Starward took these freshly-dumped octave barrels and filled it in 2018 with their new make spirit for their signature single malt. It was bottled in 2021 and has been released in the US in May 2022. .

Tasting Notes
"The aroma is full of berry fruits and orange peel along with a nutty, toasted cereal profile (think Grape Nuts). Tasting is a bit of a rollercoaster with the palate starting with a spicy, oak filled bite followed by a rush of dried fruits (prunes, berries, dates). The finish is moderately full and at close to 100 proof, the alcohol bite helps to bring the whisky to a close. Has a pleasing winter spices profile at the end making this a good way to end of a hearty meal. Fans of sherry-aged whiskies should give this a try."
