Aged Rum
Taconic Distillery // USA
Taconic Distillery's Hudson Valley facility produces primarily bourbon and other whiskeys.
The single rum, like all their spirits featuring a label with Copper, the family foxhound, is made from molasses, aged two years in bourbon barrels, then their own rye barrels.

Tasting Notes
"Notes of bourbon, caramel and vanilla dominate a nose with thoughtfully restrained heat. On the palate, wood is more apparent, some toasty caramel emerges, and spicy rye begins to take over from the more polite bourbon. Whispers of baking spice continue into the medium finish. There's not much complexity here, but in compensation there's also a to-the-manor-born air of good breeding."
