Bull Run Distilling Company takes their Temperance Trader Bourbon Whiskey, which is distilled from a high-rye mash in Indiana, and then matured and bottled in Oregon, and finishes it for 10 months in chinato barrels sourced from Oregon Winery Cana's Feast.
These barrels had previously held the chinato, made from Nebbiolo wine and infused with gentian, mace, fennel, coriander, black pepper and more.

Tasting Notes
"On the nose, this is surprisingly soft for a whiskey, almost elegant. Toasted oak, roasted almond, barn-wood and a soft wine note pair with light vanilla and caramel flavors along with poached prune. On the palate, the entry is soft, with cereal grains, light oak and gentle vanilla appearing before a cinnamon note floods in. After the cinnamon recedes, dried plum, oak, and fennel appear. The original flavoring agents of the chinato have clearly made it into the bourbon. They are subtle but they are definitely there. The finish returns to a dried plum note, some oak and bitter herbs. "
