El Mayor Blanco is produced from estate-grown 100% Blue Weber agave harvested in Jalisco. The agaves are cooked in an autoclave rather than an oven and the cooked agaves are shredded with a mill rather than a tahona.
Twice distilled in copper-lined pot stills, it is bottled at 80 proof without aging in an attention-getting "swoosh"-shaped bottle. .

"The nose is light but also somewhat hot, a quality that's enhanced by pepper but balanced by an agave sweetness. The heat remains on the palate where is gets some help from a fruity sweetness reminiscent of Poire Williams eau-de-vie, all of which is bolstered by additional, though not distinctive, spice. The finish is short (but not sweet) and peppery."
