While high proof tequila is not uncommon in Mexico, it has not been imported to the US until now. Tapatio is a collaboration between Marko Karakasevic of Charbay Distillery & Winery in Napa, CA and Carlos Camarena, whose family has a long tradition of distilling in Mexico. Bottling at this proof is meant to capture the truest essence of the agave without watering it down.
Tequila BlancoDistilled from 100% blue Weber agave, it is typically unaged , clear, and bottled straight after distillation. Sometimes rested in stainless steel up to 60 days and can also be aged in wood for no more than 30 days.
"The peppery spices are the first thing to come to the fore, then flavors open up to classic agave notes of bell peppers, grapefruit, mushroom and lime. A sweet note of vanilla ties it together before moving into a hot, cinnamon, slightly smoky finish. In all, the flavors are very strong, which is the whole point. Try it in a Margarita and for once you can taste more than lime, sugar and salt."
