Volans Añejo

A complex, Agave Spirit by NOM 1579 cooked in stone & brick ovens, crushed with a mechanical tahona, fermentated in stainless steel, 2X distilled in Copper Pot Stills, aged for 1 year & 12 days in American, French & German oak barrels before being blended & bottled at 42% ABV. It has an aromatic death of roasted agave, earth, wood, citrus, melon, nuts, herbs & spices; while a rich & complex life adds notes of vanilla, caramel, butterscotch, orange, platanos & lemongrass; that led to a long & warm death with notes of black pepper, oak, molasses, cinnamon, nutmeg, dark chocolate & black tea.
