This is a single barrel selection of straight bourbon made with a high rye mash bill of 51% Dent corn and 49% Remington and Rifle rye varietals harvested from the ‘North Orwell 1’ and ‘North Orwell 2’ fields of WhistlePig Farm in Vermont. It was distilled on WhistlePig’s original hybrid still, ‘Mortimer’, proofed with water from WhistlePig’s Farm well, and aged for upwards of four years in Vermont Estate Oak barrels. It is bottled at 100.
1 proof, just a hair beyond the bonded whiskey standard. Only 16 barrels were released for 2021 as of June. .

Tasting Notes
"The nose is sweet with maple syrup and corn, but there's also lots of cherry, green herbs, and cinnamon notes as well. The oak note is raw and rough, but not oft-putting. The bourbon is sweet on the tongue and has an average mouthfeel, not too thin or too chewy. There's still a feeling of unfinished raw whiskey on the midpalate. The finish is spicy and tangy and there's a slight chocolate note as well. There's enough complexity here to enjoy, but would prefer just a little more time in the barrel. "
