This small batch expression is made from a mash bill of local KY-grown 56% rye along with 33% corn, and 11% malted barley.
It is entered into a 53 gallon barrel with #4 char at a lower proof than traditional rye whiskeys, between 100 to 105 proof, and matured in the upper floors of the distillery's warehouse for a minimum of 4 years, after which it is proofed back down to 105 before bottling.

RyeUnlike bourbon, rye whiskey can be made anywhere in the world. But if made in the US, the mash bill recipe must be at least 51% rye and it must be aged in new, charred oak barrels with no age requirement. Elsewhere, the rye whiskey will be made keeping the country of origin's rules regarding the recipe and minimum aging.

Tasting Notes
"The nose is a springy mix of freshly cut dill, grass, thyme, and mint along with golden apple, cinnamon, and a hint of lemon. In contrast, the palate is much less herbal, and tastes a bit like a freshly baked oatmeal raisin cookie, with baked grain notes, vanilla, sweet spices, citrus zest, and a hint of dried fruit. It is lacking the sharp clove-black pepper spices that are typical in most ryes, but still but finishes on a sweet, slightly spicy, and zesty note. "
