Yongehurst Distillery Harbour Rum

This white rum was distilled in Toronto using organic molasses from South America which was fermented with a wild yeast harvested from Southern Ontario Russet apples without the addition of sugar. Two copper and stainless-steel hybrid pot-column stills distill all spirits produced at the Yongehurst Distillery including this introductory rum. Note: Limited availability of the rum which are sold in 375ml bottles. Released in Ontario initially with plans for further expansion.
Silver RumAKA Blanco, Light, White. Rum that is usually aged (but not always) and carbon-filtered to remove any color. No specific type or size barrel required. No set time required for aging for most countries with a few exceptions.
"This rum has fortitude yanking some terrific vegetal and earthy flavors from the still. A citrus brightness teeter-totters over the initial cachaça character. It’s hot on the palate with marshmallow, candy floss, and a pleasant apple sweetness for balance. The vegetal tone returns in the popping finish. This rum is bound to get your shaker arm a workout punching up any citrus-based rum cocktail. "
