But in a gin, it highlights the herbaceous and citrusy notes wonderfully. Rhubarb gin displays a slight sour flavor and proves inviting for additional sweet or spicy elements, like strawberry or ginger. Whether you drink these rhubarb gins over ice, with tonic or in a cocktail, prepare for a nostalgic treat and a wallop of incredible flavor.
