Nose: Incredible oloroso fragrance jumps out immediately with dark chocolate and cherries. Delicate spices follow, ginger, white pepper and cinnamon with dried fruits, raisins and apricots. A brief reminder of flaky pastry with prune marmalade. A wood note lingers in the back, reminding slightly of a bourbon cask finish which is interesting because it is only finished in Oloroso casks. Adding water absolutely opens it, making the sherry influence much more apparent, bananas and mango jump out with macadamia nut and white pepper. Palate: Red fruit sweetness as soon as you taste it, the cherries and red apple are first to appear followed by light milk chocolate. Ginger and cinnamon are much stronger at the back of the tongue. Adding water brings out the tropical notes in the taste as well, a burst of banana, mangos, mandarins and a slight coconut note. Unlike the nose, water causes more and more oak to appear in the taste. Finish: Neverending, ever changing, the finish holds the sherry influence until the end, with cherry, ginger and cinnamon.

Reviewed April 26, 2019 (edited August 24, 2020)Nose: Immediate sea salt and smoke, briny marine notes with seaweed, light peat from coastal wood and moss with hints of cheesiness. some black pepper is complimented by green fruit sweetness, green grapes and slight tropical fruit, almost pine apple. Palate: Much heavier smoke, rich and oily, grape and green apple come through with spices, cinnamon perhaps. Herbal on the back of the tongue, rosemary and sweet vanilla. Buttery biscuit lingers with cheesy and kipper notes. Finish: Short to medium in length, very rich, slight oak, very sweet with ever-lingering smoke and herbal notes, mossiness -

Reviewed April 13, 2019 (edited October 28, 2019)Nose: A very friendly smoke is introduced with a fruity sweetness, citrus and plums. Vanilla and cream can be found lingering, but spices, perhaps chili becomes very apparent. Palate: Rich, immediate creamy sweetness. Much spicier than on the nose, with slightly less smoke, but the smoke is much earthier. Citrus oil is the predominant fruit note, an orange rind. Oak from beginning to end. Finish: Oak and citrus remain for a mild finish. -
nose: very prominent herbal notes, slight salty, vanilla reminding of bourbon, tangy orange sweetness, almost tangerines and white pepper. Adding 3 drops of water introduces a slightly creamier note. palate: spiciness, cloves and sea salt primarily jump out, very slight coffee. black pepper and vanilla appear with lemon, but the spiciness lingers from beginning to end. slightly oily texture finish: cloves and cinnamon remain for a medium finish, but the oiliness transforms into a dry finish

Adding water accentuates the sweeter notes of caramel and orange rind. finish: short wood with honey
