Tastes

Nose is a welcoming chalk, mint, honey, hay and bread pudding with cinnamon, vanilla, nutmeg and pecan. Elusive herbal note. Palate is honey and hay with flowers, orange, oak, caramel, vanilla, cherry, raisin, fig, toffee, clove, some mildly dank herbal notes…bay leaf? Finish has lingering spices, smoky earthy sawdust and a lingering herbal note that takes a turn toward bitter. I was expecting more from this one and the final note is regrettable but it has enough going on to make it interesting.

Sweet and salty nose. Thick briney taste—agree with the bacon assessment—with some apple and tannic, peaty smoke. Caramel, smoke and saline finish.

Maple, hay and menthol nose with a hint of mint. Great mouthfeel with shortbread, apple, leather, caramel, peanuts and a nice rye edge. Long spicy oak finish.
