An intense, Dark Rum by Master Distiller Allen Smith for Mount Gay Distilleries Ltd in Barbados; getting its name from the deeply charred finishing casks. It’s a cross section of Mount Gay Rums aged between 3 & 7 years with more than 1/2 of the Spirit dripping off double pot stills & the rest coming from the column stills. All of the Rum was aged in American Whiskey barrels. After marrying, the Rum was finished in ex-Bourbon casks & bottled at 43% ABV. It has an aromatic birth with notes of Rum-raisin cream, vanilla toffee, allspice & a hint of brown butter; while a bold life adds notes of gingerbread, toffee, cinnamon & cracked pepper; that leads to a long rich & spicy death. A complex, Blended Dark Rum by Master Distiller Allen Smith for Mount Gay Distilleries Ltd in Barbados distilled in both a pot & column still; then aged between 5 & 17 years in a combination of cask types: ex-Bourbon, ex-Whiskey & ex-Cognac; before being bottles at 43% ABV. It has an aromatic birth with notes of flamed orange zest, mulling spice & humidor; while a delicate & creamy life adds notes of mango, raw cane, plantain, cloves & warm oak; that leads to a warm & spicy death of medium length with notes of pepper & toffee. A rich, limited batch, aged Afro-Carribean Rum that is a collaboration between Barbados' Foursquare, aged in American white oak & Gray's Distillery of Mauritius, aged in French limousine oak & Cognac casks. It's then married in ex-bourbon casks and bottled at Foursquare & bottled at 43% ABV. It has an aromatic birth with notes of buttery oak, marmalade on toast, chocolate truffle & dried berries; while a rich life adds notes of chocolate, oak, butterscotch & ginger; that leads to a balanced death of medium length with notes of sweet pepper, anise, oak, juicy raspberry, orange oil & caraway. An elegant, Rum by Juan Alberto Alvarez in the Dominican Republic crafted with local sugar cane juice that is fermented for 30 hours & aged at 70 proof for 10 to 15 years in ex-bourbon barrels using the Solera method before being bottled at 40% ABV. It has an aromatic birth with notes of sugar, citrus, dried fruit, nut, wood & spice; while a rich life adds notes of orange, raisin, dried cherry, vanilla & coconut; that leads to a balanced & semi-sweet death of medium length with notes of pepper, almond, toasted oak & smoke. An intense, Rhum Agricole from Martinique, made in the foothills of Montagne Pelee, lies JM’s Rum distillery, dating back to the year 1790. The name comes from the initials of Jean-Marie Martin, the founder of the distillery. The rhum is distilled in column stills & aged in oak for over 10 years. It has an aromatic birth with notes of toasted nut, lemon, sage, mango, passion fruit & a hint of a Bourbon; while a copper filled life adds hints of citrus, caramel, cinnamon & nuts; that led to a long & warm death with notes of white pepper, cinnamon & nutmeg.
