Baker's Single Barrel Bourbon 7 Year

Reviewed January 19, 2022 (edited March 19, 2022)This is the second Baker's SB I have tried, wasn't thrilled with the first one, but this one is a different story. Nose starts off heavy with apple cinnamon and then opens up to tons of vanilla and butterscotch. The palate has loads of black pepper and wood spice with an overall caramel coating that stays through a long finish. This Barrel was definitely a winner and clocked in at 7 years 7 months old. -
Old Overholt Straight Rye Whiskey (114 Proof)

Reviewed January 12, 2022 (edited February 24, 2022)On the nose you get cinnamon, dried apricots, pepper spice. The palate starts off with some faint chocolate notes, lots of heat and alcohol, along with some grain bread. The finish is medium to short in length, which is surprising given how hot it was on the palate. Overall a very nice rye that is perfect for a winter night around the fire pit.34.0 USD per Bottle -
Coopers' Craft Original 82.2 Proof Kentucky Straight Bourbon

Reviewed January 8, 2022Very sweet on the nose with vanilla cake icing dominating along with butterscotch and caramel. Very thin in the mouth, with some slight fruit joining the vanilla. The finish is quick and easy. Overall this is an easy sipper but not very memorable. -
The nose is somewhat of a let down, not that it is bad but that it is hard to pull out specific notes because they are so muted. After some time I do get some faint hints of vanilla, corn,, and maybe cardamom. The palate is much more enjoyable with some spice and heat coming to the fore immediately along with baking spices. The finish is wonderful and lingers a long time. This one starts of slow but then comes through at the end for an enjoyable, if unremarkable, sip.

George Dickel 8 Year Bourbon

Reviewed December 29, 2021 (edited April 17, 2022)The nose starts off with hints of peaches and cream and then moves into baked apples with a light sugar coating. The Dickel gummy/vitamin note is present at the front of the palate, but then fades into a surprising bit of spice towards the back. Overall a nice full sip that does differentiate itself a bit from the normal Dickel lineup but not enough to make you forget you're drinking Dickel. -
On the nose there is a wonderfully rich and balanced blend of dried fruits, nuts dipped in honey and wrapped with leather with a sprinkle of allspice and nutmeg. On the palate there is a pleasantly surprising burst of herbal rye and spice notes that jump out immediately. Towards the back of the mouth you get some vanilla and butterscotch. The finish lingers nicely, but the overall mouthfeel is more watery and not as rich as the nose promises. This is definitely a unique profile that hits most of the time and will be looking forward to coming back to this one soon.

Balcones Lineage Texas Single Malt
American Single Malt — Texas, USA
Reviewed December 18, 2021 (edited May 24, 2023)Like all Balcones, this is a wonderfully complex single malt but not at all unapproachable. The nose has the same signature "fruit tang" note that the flagship Texas "1" has, which I can only describe has Welch's grape juice. There is some sweet honey and vanilla lingering beneath as well. On the palate you get some nice spice upfront that carries throughout in a pleasant way. There is also cinnamon/nutmeg and faint creme brule notes along with an oily mouthfeel. The finish is medium to long with the spice hanging around. -
Nose: very clean and classic Bourbon notes are apparent right off the bat. Butterscotch and vanilla dominate, while there is a hint of caramel that lurks below the surface. Almost alcohol, which is notable because of the Proof. Palate: The vanilla continues on the palate with some nice cinnamon and brown sugar notes that make an appearance. Some slight wood spice is also detectable towards the back. Finish: The finish is mild, but pleasant, with some pepper spice lingering around. Overall, this is much more enjoyable pour than it's 90 Proof cousin. Not spectacular, but a classic pour front beginning to end.
