Simply Beautiful. As I mostly stick to bourbon, Redbreast is a whiskey that I often find myself going back to. I have had many of their offerings, but this takes the cake. Its a complex and beautiful nose that is much more present than in other offerings. Rich dry fruits, such as plum and apricot, with a subtle hint of spice. No peat! Upon tasting, the true nature of this whiskey comes to light. The dried fruits are still very much at play, but there is a smooth, subtle custard element that comes into play with the backing of the higher proof. Smooth and velvety, yet strong and fortified. Notes of cherry, apple strudel, rum, and ash. Fruit forward yet reminds me of my grandfathers tobacco pipe. The pallet is very approachable. Unique and complex without being over-proofed. Smooth vanilla up front with lingering complexity and spice on the back end will keep you going back for more. Keeping on par with the nose, you will notice a slight longering of smoke and ash. One of the more unique bottles I own. Fantastic value. -
