This version of the single pot still whiskey is in it's original cask strength. But what does that mean? No addition of water to bring down the ABV and mute its natural flavors. Furthermore, it is non-chill filtered. Think of it as a natural beauty without airbrushing for the marketplace.

    Produced in Ireland from a mash of unmalted and malted barley (30% each required) from one distillery. Traditionally, it is distilled three times in a pot still. Up to 5% of other grains allowed. Must be aged for at least three years.

Tasting Notes

"Perhaps it's the suggestion of its provenance, but there is a distinct Irish soda bread thing happening. Biscuity, mildly sweet, ever so slightly salty, with a pleasant tang of dried fruits like apricots and raisins. Finishes with sweet spices, a hint of lemon and some vanilla, with some toast and nuttiness present from the sherry cask aging."
