Back to the beginning: I get some honey on the nose along with vanilla bean. Sweet notes on the front with meringue quality. Vanilla continues throughout. Heat kicks in pretty strong, which I enjoy but would beat up your pallet for other tastings that night. Overall, this is my type of bourbon, only knock is that it is a little simple.
Bywater Straight Bourbon Whiskey
Bourbon — Louisiana, USAReviewed October 26, 2022Nose is pretty fruity, maybe pear and wheat. Taste definitely has lots of floral notes like wheat and licorice. Not particularly smooth. Finish has honey, but it also a little bitter, like an overbrewed tea with honey. Finish has moderate finish.
Minor Case Straight Rye Sherry Cask Finished

Got myself a bottle to confirm and wasn’t disappointed. Very fruit nose with plum, cherry, clove. Color is the only thing that says that this is a two year whiskey. I definitely get plenty of sherry and mild pepper. I love the finish too. It gets a little bitter at the very end that is almost citrus rind.
Elijah Craig Barrel Proof Bourbon
Bourbon — Kentucky, USAReviewed October 16, 2022Nose for me is full of cherry and spice. I do get a lot of cinnamon right away that moves into oak, leather and a little vanilla. Despite the high proof, still not a tough pour to drink straight.

The nose clearly has plenty of rye spice as well as some baked apple and cinnamon sugar. Plenty of creamy vanilla and floral notes. I’m impressed with how smooth it is with its proof and being 100%rye. Black Peppery long finish.
Eagle Rare 10 Year Bourbon
Bourbon — Kentucky, USAReviewed October 2, 2022 (edited November 14, 2022)2nd time I’m reviewing this bourbon. 2nd time I’m surprised at looking at other reviews and I don’t see more people tasting a bomb of cherry. On the nose and the throughout the taste. Now, I’m tasting this with desert and I like it even more. The cherry is met quickly with apple and a little nuttiness like pecan. I get more of the spice this time around and towards the finish with cinnamon stick and certainly some oak. Finish is moderate.
Old Fitzgerald Bottled in Bond 17 Year (Spring 2022)
Bourbon — Kentucky, USAReviewed September 4, 2022Nose is very woody, consistent with that old of an aging as well as vanilla. I actually get a nice soft vanilla start. It is very smooth. The mid-taste to finish is where it gets special. More of a bitter profile with tobacco, dark chocolate, and smoke. Finish is very oaky. Awesome pour.
Maker's Mark Cask Strength

Taste has plenty of vanilla (more like a more adult vanilla, like custard as opposed to soft serve). The high proof actually isn’t as harsh as I expected. Little orange/citrus early on. This is followed by some chocolate and burnt sugar. Finish is moderate.

Bourbon — Kentucky, USAReviewed September 3, 2022Nose is full of apple, a bit ethanolly. I get a lot of sweet early elements. Brown sugar Caramel, vanilla, and some of that apple. Honestly, the most unique part of this pour is that I’d actually drinks pretty cold. It’s at room temperature, but it seems chilled. Pretty harsh bite, especially for under 100 proof. However this is made up with a great warm and long finish. A little char and some clear oak at this point. Slight tobacco. Honestly it grew on me throughout the drink and the harshness improved. Will have to taste again after a primer.
