Reviewed January 16, 2021 (edited July 5, 2021)This is a very tasty whiskey. Maybe I’m biased because I’m from SW Michigan, but this whiskey hits the pallet and provides that moment of “this is something special”. I really like it. -
This is delicious! The flavor profile is like a grudge match being played by the peat and smoke on one side and the fruitier notes from the sherry cask on the other side. The match will be headed to OT because neither side dominates. It’s that well balanced. Like any good OT match, the finish is long and every moment a joy to experience. To me this is perfectly executed.

Balcones Texas Pot Still Bourbon

Reviewed November 19, 2020 (edited January 28, 2021)The alcohol is forward and the flavor takes a back seat and seems compressed like it can’t break free. This is the complete opposite of what Balcones usually delivers. The corn flavor is soft and pleasant but too muted. Vanilla is also on the pallet. The finish floors the trend like it’s trying but just seems to run out of gas. -
I’m impressed with most of what Balcones produces. The Baby Blue is no exception. It have a nice mouth feel and a smooth combination of flavors that include the signature corn flavor along with peaches up front and in back but with a mixture of vanilla, butterscotch, and toffee dancing in the background all the way through. This is a perfect drink for me on a Friday when I fire up the grill for dinner and look forward to the weekend.
