Paul Beau Hors d'Âge Grande Champagne Cognac

Reviewed January 20, 2020 (edited October 24, 2020)Nose: Sweet, and loaded with effervescent fruits - pear, raspberry, blueberry, lightly floral. Really bright on the nose for something that is supposedly this old. Taste: Thin mouth feel but no heat. Apples, candied fruit and nuts. Bright and spirit-y. Faint pipe tobacco, little caramel. Not wildly complex. Finish: Long, lots of molasses, brown sugar, toffee and sweet cream. Almost a root beer note. Really interesting how this transforms. Overall: This is sorta bizarre - and if it weren’t for the finish it would be easy to write off. Still, though, the nose and palate are light, not particularly complex and interesting then the finish swoops in to add a bit more. Nose: Sweet, heavy oak nose, pang of ethanol, syrupy sweet agave. Taste: Thin mouth feel, not a lot going on. No heat. Agave, light smoke, faint oak, pepper. Finish: Short, a bit hot, loaded with pepper, faint smoke, some sweet cream and berry and then it's gone. Overall: This is interesting but not exceptional. Reviewed January 17, 2020 (edited April 2, 2021)Nose: Super sweet - syrupy and loaded with confectioners sugar, rich raisin, grape, faint hops. Musty, rich, old tobacco, bright blackberry. Taste: Vanilla, misty grape, cocoa and raisin bread. Sweet toffee, loads of blackberry and currant. Cinnamon apple. Finish: Long, rich, musty and fun. Lots of apple, cinnamon, raisin bread, blackberry and toffee. Overall: So damn fun, what a great brandy. At this point, there is almost nothing from them that I won't try. Castle & Key London Dry Gin (Autumn 2019)
London Dry Gin — Kentucky, USA
Reviewed January 16, 2020 (edited March 25, 2021)Nose: Sweet juniper, honey and loads of cinnamon. Pine, faint sap, pepper. Taste: Thick mouth feel with a syrupy structure. Heat very nicely in check. Lots of cinnamon here, pine and juniper in the back ground with some anise and pepper. Finish: Long, but the cinnamon takes over the show here. Heat is still very well behaved, but it's hard to hear over the cinnamon here. Overall: I like this, as it exhibits some great character but the dominance of the cinnamon character is a bit disappointing. For a fall drink, this drinks more like a winter ensamble, in my opinion. Castle & Key Restoration Release Gin

Reviewed January 16, 2020 (edited February 18, 2021)Nose: Big juniper, lemon and pepper. Behind that is some savory cassia, anise and cardamom. Powerful but complex. Taste: Thick, syrupy mouth feel. Sweet anisem juniper and lemon. Orange peel and white pepper is there as well. Proof is welcome and in check. Rich and powerful overall. Finish: Long, dominated by juniper, pepper, orange peel and essence of lemon. Delightfully powerful while remaining balanced and pleasant. Overall: This is a killer gin, and one I'm a big fan of. This nails the London Dry style so perfectly, while remaining complex and interesting and powerful. Big props to C&K on this one. Nose: Sugar, molasses and a huge floral punch Mouthfeel: A little thin but coats nicely Taste: Like shoving your face in a bouquet, the sweetness almost totally vanishes in lieu of a huge floral flavor. Finish: Sugary sweetness shows up a little bit, with a little vanilla. Overall: Not bad, not sure it's worth the $20/350ml price but I'm always willing to give something local a shot every now and again; I'm not overly disappointed. I'm giving this a Rank 4. It's not amazingly complex, or delicious. It's just kind of there. A thin, sweet floral dram with no real complexity.20.0 USD per Bottle

Nose: A little sweeter than standard Makers. Much more vanilla and maybe a hint of cinnamon and oak? Makes sense for all of that oak staves shenanigans. Taste: Not at all like the nose. A bit spicier and woodier than regular makers but no vanilla and weird sweetness showing up. Splenda sweet, almost. Finish: Fairly short, mild heat and some funky spicy Splenda sweet on the way out. Overall: It's not bad. I like it more than original Makers but it certainly isn't a show stealer. I like the nose a bit more but wish it followed through in the body. Smooth Ambler Old Scout Ten Bourbon Whiskey

Reviewed January 16, 2020 (edited January 20, 2020)Nose: Very sweet, lots of vanilla, sugar, ice cream cone type cookie notes. Cinnamon and a little oaky clove, but very much a leaner into the sweet category. A lot of corn syrupy notes here which I think is the culprit. Taste: Sugar and maple. Originally, I thought the proof was overpowering but that was definitely my virgin palate. Sweet and sugary, almost vegetal and corn heavy. It's complex but leans towards the sweet side with a lot less oak influence than expected for the age. Finish: Medium but complex and relatively gentle. The proof is there but it's not punishing. Just a nice sweet departure (literally) Overall: This is a fine dram, especially at the price. Although I'm not taking price into account, it's worth noting that this is a great value since it can be had for $45 or so where I'm from. It's no bargain like the Eagle, but it's still very reasonable. The flavors are strong and complex and there aren't any major flaws to speak of. For that, I'll give this a Rank 6. Thanks for reading! Eagle Rare 10 Year Bourbon

After sitting for fifteen minutes or so, the initial acetone fades to maple and brown sugar with some hints of orange/lemon and vanilla. There's some odd passion fruit, lots of sweetness and smells very well rounded out. Taste: This is a nice relaxed dram, decent mouth feel with no hint to the proof. A bit sweeter too. I taste much less fruit than I smell but there is an odd maple flavor mixed with fruitiness that appears. Lots of cinnamon, maple, clove, sugar and a light hint of oak. Finish: Pretty relaxed here also. It's medium in duration with very gentle heat. Lots of sweet notes with a fair hint of wood peeking in. Overall: Overall, I'm going to give this a Rank 6. It's delicious, complex and also well made. I'm happy to have picked this dram as a starter.25.0 USD per Bottle
