Nose: banana runts candy, sweet corn, vanilla, Granny Smith apple Palate: light barrel char influence, figs, green banana Finish: more runts candy, slight rye spice, gentle oak

Nose: cinnamon, dusty rickhouse, brown sugar, tobacco leaf, dark cherry Palate: peanut shell, aggressive baking spices, sweet vanilla. Mouthfeel is borderline thin Finish: spicy Christmas cider, big red cinnamon gum

Nose: seasoned oak, vanilla, cherry candy, raw dough Palate: thicc mouthfeel-feels like pudding, sweet and rich like molasses on buttered pound cake Finish: vanilla, brown sugar Overall it comes across as a simple dram, but expertly executed. Nose: first smell immediately made me think of yogurt covered raisins and buttercream frosting. Second smell reveals a sweet-corn forward vanilla. Brown sugar, citrus, and butterscotch candy are hiding in the background. Palate: chewy caramel candy, herbal orange zest, cherry, leather, and barrel char Finish: spicy finish that has a nice rye quality to it in the back of the palate. Cinnamon, more vanilla and oak influence. Overall I’m excited to see that one of our distilleries here in Texas means business. The other Texas distilleries to me leave me wanting much more. I am excited to see what future releases from them will look like once they have some older barrels.

CLAWS single barrel pick Nose: toasted smoky marshmallows, burnt creme brûlée sugar crust, barrel aged maple syrup Palate: rich nose doesn’t quite pull through on the palate. Caramelized sugars, leather, cigar leaf, and maple syrup come through nicely but it feels thin in the mouth. It’s redeeming factor is it leaves a thin buttery film on the tongue. Finish: cherry slush, sweet barrel smoke, and vanilla @tbran19 generously provided the sample, cheers!

CLAWS pick, 57.4%, barrel 24280, 5.5 years old Nose: cashews, honeycomb, dried dates, dried blueberries, vanilla Palate: beautiful oily slickness coats the entire mouth, hint of ash, rich barrel char, and dried fruits Finish: sharp zing of ethanol leads to cherry, pipe tobacco and smokey oak

Nose: fall baking spices including cinnamon, cloves, and nutmeg. Slight woody earth coming through. Palate: unexpected fruit, some strawberries in brown sugar, figs, grainy rye bread, and a little honey Finish: finish is silky sweet with some sweet brown sugar and mint This is a fantastic rye, it doesn’t have the typical dill, heavy mint, and obvious rye spice, but is a solid dram.

Nose: flaky pie crust, caramelized sugar, faint woody funk and a wallop of cherry pie filling Palate: cherry pie mingles with some sweet tobacco, aged oak, and brown sugar. This whiskey has a great mouthfeel that really coats the palate. Finish: baked apple, simple syrup, cherry candy, and sweet pipe tobacco linger nicely

Nose: vanilla bean ice cream, baking spices, charred oak Palate: cherry pie! Also getting sweet raspberry, red candy, red dum-dum, butterscotch, brown sugar Finish: long lasting oaky finish with baking spices

Nose: very prominent vanilla, lots of vanilla custard in the nose. Finding dime cherry, and oak as well. Palate: very gentle on the palate, brown sugar, creme brûlée, sweet oak char, brown sugar Finish: leather, tobacco, and more brown sugar.
