Nose - Very sweet herbal mint/dill notes up front followed by the smell of fresh pressed sugar cane juice, sweet creamy vanilla caramel with a hint of toasted coconut.
Taste - Sweet vanilla and sweet mint/dill herbal notes, lightly burnt creme brulee top bitter sweet, light oaky bitterness, hint of dark molasses glazed char grilled pineapple.
Finish - Lingering oaky/grill char bitterness, grilled pineapple char, grilled sugar cane char sweet.

Final Thoughts - Although there's not much info regarding the source of this rye, it has the sweet mint/dill notes I usually get from MGP ryes. I would describe this finished rye as taking something like High West's Double Rye and finishing it in rum casks. The rum finishing adds some nice sweet tropical notes and complements it very well. I think this is something best enjoyed neat to fully appreciate the nuances of the finished rye, but I have yet to try making The Saratoga Cocktail as mentioned on their website.
