Bayou Select Rum starts with Louisiana-grown sugarcane distilled twice in copper pot-stills in Lacassine, LA. Prior to bottling, it’s aged in ex-bourbon barrels for up to three years. The Bayou line of rums also includes Satsuma, Spiced, and Silver expressions.
Aged RumRum that is aged, but no specific type or size barrel required. No set time required for length of aging, but will often carry an age statement (which should be taken with a grain of salt). Often thought of as "sipping rums".
"In the glass, the Bayou is medium-amber colored, darker than you might expect for a rum of this age. Nosing it yields subtle caramel and oak scents. The initial entry is a burst of sweetness that turns to caramel in the mid-palate. It finishes with a hint of eucalyptus and slightly rough edges. It’s not particularly complex or challenging, but the sweet, caramel flavors allow it to function as a sipper when called upon."
