BEARFACE Wilderness Series Matsutake
The first release in BEARFACE's Wilderness Series puts the spotlight on wild matsutake mushrooms. The whisky is a blend of three parcels of Canadian whiskies aged in different casks including French oak (red wine & virgin oak), sherry pipes (PX, cream, and amontillado), and casked Matsutake. The Matsutake cask was made by adding wild foraged matsutake mushrooms to a cask filled with BEARFACE whisky where it was allowed to infuse for 2 months.
All casks were "elementally aged" in repurposed shipping containers where they're exposed to the elements. The US gets its allotment in December 2023. (SRP $44.

Tasting Notes
"The aroma of the whisky leans to an herbal profile with some gentle earthy elements along with moderate amount of cereal grains. On the palate, the whisky begins with a medium sweet taste along with light barrel spices. Then the umami and earthy notes become more clear. There's also some light fruit around the edges along with some delicate toasted oak. If you're looking for an umami-bomb or an intense mushroom note, you might be disappointed. However, the whisky has nuance which requires you to take your time to enjoy it — that's always a good thing."
