As the name indicates, the rum is copper pot-distilled, using a still known as "The Old Copper”, the only one of its kind in Australia. As Beenleigh says, it was modified a long time ago by “an old German Guy”.
After the distillation, it is aged in ex-brandy vats, before being finished in charred American oak barrels for a minimum aging of two years in total. It is crafted with local ingredients.

Tasting Notes
"The rum is saddled by cinnamon, apple and honey. Vanilla beans and Mānuka honey make the rest of the beast, calmly plodding through a spice dotted and herbal oil painting. When a sip finally comes, it filled with vanilla-spiced chai and more honey. The consistency is richer than the taste, but equally rewarding. The finish is long with sweet spice moving across the tongue, turning tart and woody before the key vanilla bean makes its show-stopping appearance. "
