The nose sweet and nutty with vanilla and cherry notes. On the palate it reminds me of a proofed down little book ch5. There's a nice rye spice burn with the mouth coating sweet cherry and vanilla I got on the nose. The finish is decently long as the spice builds. Overall very happy with this pour!
Just cracked this and may need to let this sit to open a bit. I hope it gets better. So far not impressed. A bit of caramel on the nose then some ethanol smell. Light on the palate and a little flat. Short finish towards the back of the palate. Not a lot of flavor and can’t really tell this was a cognac cask finish. Update: after sitting for a while it’s really not much better.
Let’s get into it.
Nose: canned pears, honey (possibly brown sugar), and baking spice
Palate: fruit sweetness and rye spice
Finish: surprisingly long, with lingering rye and warmth
Would definitely love to have a bottle.
