The Alchemy Distillery (Boldt’s producer) is a very new distillery (first batch December 2015) that produces a range spirits in northern California. Their custom-made Vendome copper-still seeks to create spirits that speak to the local grains used. For the Geneva, a hard red-wheat from a third-generation farmer across the border in Oregon is employed.
The distillate is infused with juniper berries, star anise, cassia bark, cubeb berries, citrus, and fresh green-needle tips from native redwood trees on the distillery’s property among other botanicals. The result is rested in oak barrels — in this batch the age is 63 days. Released in August 2016, this currently is only available in California.

Genever-StyleProduced outside of the designated areas allowed for genever (Netherlands, Belguim, and specific areas of France and Germany). These products are produced in the style of genever using a malt-wine as its base, but the amount isn't regulated. Aging is not required, but is allowed. Not a legally recognized category.

Tasting Notes
"This product shows a lovely golden color and a satisfying aroma of honey graham cracker, toasted sawdust, and a hint of crisp spruce needles and roasted exotic spices. The palate has a nice weight with more of the candied citrus and other botanicals making their influence felt. This is a very well executed Genever-style product with many classic components but a touch less juniper than its European counterparts. The combination of the local grain, craft distillation, and regional botanicals make for a very welcome addition to a relatively rare category. "
