Calle 23 Tequila Reposado
Los Altos, Jalisco, Mexico
Calle 23 is one of the few distilleries overseen by a woman, Sophie Decobecq, a former biochemist who started in the South African spirits industry. The agave is grown in the Los Altos (highlands) of Jalisco, where there is more even sunlight for ripening. This reposado is double-distilled in pot stills and aged 8 months in ex-bourbon casks.
Tequila ReposadoDistilled from 100% blue Weber agave, it is aged from 2 months up to a year in barrels no larger than 20,000 L. Any type of wood is acceptable, although ex-bourbon barrels are most common. Reposado translates to "rested".
"The influence of the wood is very strong, adding a sort of Dr. Pepper-like cherry cough syrup flavor to the agave. That's not actually a bad thing, as it makes this a unique sipper. There is still enough of the traditional agave fruit flavors and warm spice to see it out into the finish."
