Calyx Gin (2015 Edition)
Modern Gin
Ascendant Spirits // California, USA
This spirit represents a collaboration of Santa Barbara’s Ascendent Spirits and celebrated wine expert Rajat Parr.
The result is a gin that incorporates vinous concepts to the distilled world — for example, the production bares a vintage starting with this inaugural 2015 release and the botanical combination (which incorporates 14 different hand-picked ones) leans toward a floral/ fruit-driven profile reminiscent to the balance found in wine.

The botanicals are chosen to show traditional London Dry components with a healthy influence of local California ingredients selected to show the region’s terroir — the French concept of agricultural products showing a sense of place because of their unique growing condition.

Tasting Notes
"This is a gin that very successfully combines traditional gin flavors (juniper, coriander, and angelica) with some more inventive American West influence (honeysuckle, local mint, and local grapefruit.) Not an easy task. The aromatics show angelica and juniper’s heady medicinal tones with a delicate undertone of citrus peel and spring flowers. The palate is rich and layered with a classic, drying, herbal entry and a complex, long, sweet-fruit driven finish. The fairly high ABV would make this a standout Martini gin cocktail, but the beguiling combination of flavors would sit nicely with a splash of tonic or even just an ice cube."
