Their use of traditional methods extend also to the wood used to roast the agave in the earth. Their methods of production have been passed down and has evolved in their family for 11 generations, or over 300 years.

"The mineral, saline, and earthy influence of the clay pot still shows brilliantly against the spicy herbaceous character of the Largo agave. Nuances amplified by the clean roasting elevate this mezcal to ethereal. Prevalent in the aroma is rich agave, roasted nuts, barbecued vegetables and fruit tossed with sage and oregano along with a myriad of savory spices. These complex aromas are restated as flavors and are balanced by candied smoke in a creamy mouthfeel. This mezcal easily reminds you of the high desert just after a heavy rainfall--bright, vegetal and clean."
