Don Julio Reposado Tequila

Don Julio's distillery in Atotonilco, Jalisco (NOM 1449) utilizes Highland agaves that are steam-cooked for 72 hours. This is double-distilled in stainless steel pot-stills, and aged for eight months in white, American oak. The reposado is then bottled in the characteristic, square-shaped bottle at 80 proof.
Tequila ReposadoDistilled from 100% blue Weber agave, it is aged from 2 months up to a year in barrels no larger than 20,000 L. Any type of wood is acceptable, although ex-bourbon barrels are most common. Reposado translates to "rested".
"The reposado offers less citrus on the nose than the blanco, and the agave component now comes across as more cooked. The oak seems also to have tamed the original spirit's fruit and citrus (though the pepper remains) while adding a slight bitterness. Better as a mixer than solo, and much improved by a splash of Topo Chico."
