Don Julio Reposado Tequila
Don Julio // Los Altos, Jalisco, Mexico
Don Julio Tequila sources its agaves from the Highlands of Jalisco. After harvesting, they are then steam-cooked for 72 hours. The juice is fermented and double-distilled in stainless steel pot-stills. For the Don Julio Reposado, it is aged for eight months in American white oak. The reposado is then bottled in the characteristic, square-shaped bottle at 80 proof.
Tequila ReposadoDistilled from 100% blue Weber agave, it is aged from 2 months up to a year in barrels no larger than 20,000 L. Any type of wood is acceptable, although ex-bourbon barrels are most common. Reposado translates to "rested".
Cask TypeAmerican white oak
"Don Julio Reposado offers less citrus on the nose than the Blanco, and the agave component now comes across as more cooked. The oak seems also to have tamed the original spirit's fruit and citrus (though the pepper remains) while adding a slight bitterness. Better as a mixer than solo, and much improved by a splash of Topo Chico."
