El Dorado 5 Year Rum
El Dorado // Guyana
El Dorado is distilled from molasses from 100% Demerara sugar. They have 9 different types of stills at the Demerara Distillers Limited (DDL) and for this bottling they use a four-column French Savalle still and an Enmore wooden Coffey still. The rum is blended and aged in ex-bourbon barrels.
Gold RumRum that is often aged, but can also just have caramel-coloring added to provide color. No specific type or size barrel required. No set time required for aging for most countries with a few exceptions.
"The aroma begins a little dusty and somewhat like dry cardboard. Some barrel char notes appear, but the sugar aromas are gentler like the top of a crème brûlée. As you taste, you'll get just a little bit of funk, coffee grounds, and an aroma like a Sharpie permanent marker. Some copper tones come into play as well and the rum is on the dry side. Would be fine in a cocktail, less so sipped neat."
