Two harvests of Los Altos, Jalisco agave were used in the base spirit - one measured for higher sugar content and one with considerably lower. It was then rested at Casa San Matias in select barrels of ex-Old Rip Van Winkle bourbon from Buffalo Trace Distillery.

Tequila AñejoDistilled from 100% blue Weber agave, it is aged for at least a year in barrels not to exceed 600 liters. Any type of wood is acceptable, but ex-bourbon barrels are most common. Añejo tequilas are also known as "aged" or "extra aged".

Tasting Notes
"This is a refreshingly dry style of añejo that opts for woodiness and earth rather than sweetness. There's a peanuty flavor mixed in with the cooked agave notes along with a generous amount of sweet smoke and spice. Only a touch of vanilla and caramel come through. The agave-ness is fighting a little with the bourbon-cask influence, but the combination is still pulled off."
