Strong, sweet, and spicy is the scent from this rum. A bit acetone at first, but beneath the surface are layers of allspice, bayleaf, smoked demerara sugar, and cherry cavendish. Primarily sweet on the tongue with a subtle burn and a tinge of bitterness. Butter pancake syrup, cinnamon, clove, charred sugarcane, and lime. Medium to full bodied, with a pillowy mouthfeel calling to mind the clouds surrounding the San Cristobal volcano. Legs are sparse and fleeting yet attractive, with well developed teardrops. The finish is short and mild. Gentle tannins balance lingering sweetness pleasantly, revealing notes of pecans, milk chocolate, raisins, and dried coconut.
