'La Mallorquina' is the traditional olive variety in the Spanish Isle of Majorca (Mallorca). Only a few producers make oil of it, as the trees are centuries old and growing between mountain rocks.
GIN EVA used the olives as a signature botanical, harking back to the long tradition olives have as a cocktail garnish. Only 3,000 bottles are available of the first batch that was released in 2018.

Modern GinAka Contemporary, New Western, New Wave, or New American. Not legally defined, but juniper is not the dominate flavor. Often made with botanicals not historically used and/or sourced locally.

"It opens up on floral notes with hints of orange blossom, but there's also something slightly herbal, while there's a layer of juniper berries as a supporting act. The palate has a nice earthy quality to it, with a touch of cilantro and olives, as well as juniper. This gin begs to be used in a Martini."
