Thompson Bros Organic Highland Gin is made with a spirit blend of 90% organic grain neutral spirit and 10% organic floor-malted barley spirit made from organic Plumage Archer barley. The botanical blend (juniper berries, angelica root, cardamom seeds, aniseed, orange & lemon peel, coriander seeds, meadowsweet, elderflower, black peppercorns, freeze-dried raspberries) is infused with the grain neutral spirit.
Then the two spirits are blended and brought down to 45.7% ABV.

Other botanicals not classically used in London Dry gins are often utilized and often highlight botanicals grown in the region the gin is produced. "A surprisingly creamy spirit with soft notes of lemon zest and orange peel, combined with earthier notes and cardamom. Hints of strawberry, as well as raspberry slowly evolve and are accompanied by coriander and menthol. A whiff of cracked black peppercorns provide another layer of depth, all the while supported by juniper notes. Wonderfully crafted gin."
