Milk & Honey Levantine Gin begins with the Israeli new make single malt as its base (100% malted barley). To that distillate, botanicals including juniper, origanum syriacum (za'atar plant), lemon peel, chamomile, verbena, cinnamon, black pepper are added and allowed to rest for 48 hours. Then it is redistilled. Bottled at 92 proof.
Distilled GinThis style of gin takes a neutral spirit and then adds juniper berries and other natural flavorings before it is re-distilled. After distillation, additional flavors (artificial or natural) and sweeteners may be added.
"Surprisingly grainy, so in a way much more like a genever than a gin. There are delicate notes of lemon and juniper. The palate is somewhat earthy and there are hints of chocolate, but with a touch of juniper. Lovely juice."
