Tasting Notes
"From the very start, the savory notes in the gin take over. First the olives, then the rosemary, coriander, and citrus and juniper notes with the latter two coming in at a much lower volume than the others. The mouthfeel is supple and has a touch of oil which serve this gin well. As you finish, the spice notes come in a bit stronger, particularly the cardamom. We'd serve this in a Martini or Negroni and love the idea of pairing it with a cold seafood platter with the gin served on the rocks with a twist of lemon."
