Produced in the Spanish Mediterranean, this gin begins with a barley neutral spirit. The botanicals, which include Arbequina olives, thyme, basil, and rosemary, are steeped in the spirit and distilled individually. It is then blended together where water and more neutral spirit is added. It is bottled at 42.7% ABV.

    This style of gin takes a neutral spirit and then adds juniper berries and other natural flavorings before it is re-distilled. After distillation, additional flavors (artificial or natural) and sweeteners may be added.

Tasting Notes

"From the very start, the savory notes in the gin take over. First the olives, then the rosemary, coriander, and citrus and juniper notes with the latter two coming in at a much lower volume than the others. The mouthfeel is supple and has a touch of oil which serve this gin well. As you finish, the spice notes come in a bit stronger, particularly the cardamom. We'd serve this in a Martini or Negroni and love the idea of pairing it with a cold seafood platter with the gin served on the rocks with a twist of lemon."
