Gin XII
Modern Gin
Provence, France
This gin was distilled at Distilleries et Domaines de Provence and gets its name from the (mostly local) plants and spices it is infused with. These include juniper, coriander, sweet almond, thyme, angelica, grains of paradise, iris, cardamom, basil, rosemary, eucalyptus, and mint.
It is distilled in a copper plate column still, and it is made with five different distillates: one with eight plants and spices that are macerated in alcohol and then distilled together; and four from single plants which are distilled individually after each one is macerated in alcohol. It is bottled at 42% ABV.

Modern GinAlso has been referred to as "Contemporary", "New Western", "New Wave", and "New American". This style is not legally defined. In general, this category of gin, while it does contain juniper, places less of an emphasis on this botanical. Other botanicals not classically used in London Dry gins are often utilized and often highlight botanicals grown in the region the gin is produced. Most produced as either London Dry or Distilled Gins.
Tasting Notes
"Black pepper, lemon zest and earthy juniper leap out from the clean and spicy nose. It has a very classic, well-integrated gin palate, hitting minty, peppery, citrusy, and woodsy notes with a slightly sweet undertone. The finish is a little hot, but well resolved. This gin would be an excellent blank canvas for many cocktails, and very tonic-friendly. "
