Glendalough prides itself on being Ireland's first craft distillery, founded by 5 friends from Dublin and Wicklow in 2011. This is their signature Poitín (pronounced "po-tcheen," which means "pot stilled whiskey," the original Irish "water of life") recipe distilled from sugar beets and malted barley, but very lightly aged in sherry casks.
The label depicts St. Kevin, the monk credited with introducing pot stilled whiskey to Ireland in the 16th century.

PoitínPoitín or poteen is a traditional Irish spirit usually made in a small pot still. It is often made from barley, corn, potatoes or sugar beets. It isn't usually aged, but it can be for up to 10 weeks and it can also be flavored. Its name comes from the Irish word "pota" which means pot.

"One of these things is not like the other... the sherry adds an elegant cashew nut and raisin dimension to the Poitin's signature vegetal, berry and smoky barley notes. This version feels a little more weighty too. Not quite like drinking a fully aged Irish whiskey, but it's something people who haven't yet liked a white whiskey might make peace with."
