Old Tom Gin was all the rage in 18th century England. Old Tom’s are known as a fuller bodied and sweeter style of gin. Today the style has seen a great resurgence and has opened the door for many gin makers to play around with oak aging.
This gin is made from 100% pot distilled corn, juniper, and “other botanicals inspired by the spice trade of the prevailing era.” It is aged for 1 year in bourbon casks and then finished in oloroso sherry casks. The final product is bottled at 50.

Tasting Notes
"This is surprisingly light and balanced for a high-proof spirit. Everything on the nose has been sweetened a little. Juniper, sweet chamomile, honeyed lemons, and rich vanilla are front and center. The palate is lean and silky. On the palate, more honey, ripe citrus fruit, some bitter juniper, and a sweet grass finish that is often found in Rhum Agricoles. Because of its balance this could be used in a wide variety of cocktails, but an Old Fashioned should be at the top of the list."
