Ilegal Mezcal Reposado

Ilegal mezcal starts with wild espadín agave grown in the fields of Tlacolula, Mexico and harvested at nearly 10 years of age. Their piñas are cooked in a clay oven fueled by oak, mesquite and eucalyptus and mashed in a horse-drawn tahona (the horse, incidentally, is named Caballo Sin Nombre, literally "Horse With No Name"). It is distilled once in stainless-steel alembic stills and then again in copper alembic. The reposado is aged 4 months in American oak.
Mezcal ReposadoA spirit distilled from one or more different varieties of agave. Can only be produced in designated areas within 8 different Mexican states. Must be bottled in México. Reposado mezcal is aged for 2 months up to 1 year in wood.

The more rustic pepper flavors give way here to softer fruits like pear and yellow peach with a slightly caramelized characteristic. The smoke is also sweeter, like pipe tobacco and meaty barbecue.
