Ironroot Republic Promethean Straight Bourbon

After tasting their Harbinger, I approached this whiskey with apprehension. But much to my surprise, the damage from the Harbinger was merely a flesh wound. Promethean’s Nose is licorice and oaky but the flavor of vanilla lingers on the tongue.

Nose: very astringent ethanol notes hit you hard and fast followed by some grain, stewed apples, and a hint of vanilla Palate: grain forward on the front and then a burst of pepper spice in the middle, with some fruit and vanilla towards the back Finish: vanilla and caramel flow through along with some spice for a medium to long finish

Some caramel and vegetation on the nose. The palate has hints of graham cracker and honey with some vegetal undertones. The finish is fairly brief and inoffensive. Better than most other batches Texas whiskies outside of Still Austin.

Nose: Gingerbread, brown sugar, cherry Mouth: sweet raisin, cherry, oak

Batch P14; Age 30 months 50% abv; 100 proof Open 3 months Nose - Rich caramel and gingerbread, brown sugar, toasted bread, grilled corn, artificial cherry, Chinese black tea, medium oak, and medium ethanol. Palate - Corn syrup, caramel, molasses, raisins, medicinal cherry, cinnamon bun, and black tea that is steeped a little too long. Finish is medium with sweet oak, allspice, cinnamon, brown sugar, and a light jab of ethanol. Although not quite as good as Harbinger, this is another solid entry from Ironroot. I'm not always in the mood for these really sweet corn bourbons, but when I am it's hard to beat what Ironroot is making for the price. I've had all three of the Blue corn whiskeys from Balcones, and I know it's not bourbon but they fit the same flavor profile as Ironroot bourbon. I would recommend Ironroot over any of those three.
