Reviewed December 15, 2024A balanced, Irish Whiskey from Barony of Duhallow, County Cork, Ireland distilled in copper pot stills with 100% local Heirloom Barley & pure Irish spring water. Then it is aged in ex-Bourbon barrels & ex-Oloroso casks; before being bottled at 40% ABV. It has an aromatic birth with notes of grain, fruit & spice; while a delicate life adds notes of barley & Sherry; that leads to a delicate death of medium length with a hint of smoke. Reviewed September 13, 2021Nose of caramel, vanilla, oak, a touch of pear; fairly simple. Lightly sweet taste with pepper and spicy cinnamon. Neat it’s relatively one dimensional and hot for 80 proof, though it markedly improves with a little water, which exposes richness, body, and sweet honey, and really brings out the wine.
