Kirk and Sweeney Rum is made from Dominican sugarcane that is processed into grade three blackstrap molasses for fermentation and distillation. The rum is then aged in a variety of American and French oak barrels.
Burning Mast is made from a blend of 81% Kirk and Sweeney Reserva rum and 19% Kirk and Sweeney Reserva rum that has been finished in red pepper barrels for 11-19 days. It is bottled at 40% ABV and available as of December, 2021.

Tasting Notes
"Burnt sugar, cinnamon, nutmeg, and roasted coffee beans are at the heart of the aroma, though there is also a bit of an alcoholic burn. Before the spirit hits the throat, there are lovely sweet and roasty elements to the flavor base, but then everything is set on fire and it's tough to taste any nuances, or anything else, for that matter, after the rum sits on the palate and goes nuclear. Even for hot sauce aficionados, it's not recommended to sip neat, or even with a rock, though perhaps this would work in small measures as a cocktail modifier with other ingredients. Shame, because the base rum before it was entered into pepper barrels was probably quite good. "
