Reviewed September 15, 2025 (edited October 17, 2025)Uncorked pick, "Gallenstein Selection #1" 59.3% abv; 118.6 proof Open 22 months Nose - Sickly sweet malt, honeycomb, maple syrup, cinnamon, nutmeg, light oak, and medium ethanol. Palate - Sickly sweet malt, orange compote, milk chocolate, gingerbread, apple cobberl, and dark honey. Finish is long with sickly sweet malt, pralines, peanut brittle, s'mores, and medium ethanol. I appreciate craft distilleries making their own product, but since I've lived on the Kentucky border for the past 3 years, I have had the opportunity to try a bunch of lesser known products. To me there is a clear trend. In order to release younger whiskey that is palatable, they often use a higher percentage of malted barley and/or malted rye to add flavor. Think of the Chattanooga Whiskey profile, and you'll know exactly how bourbon/rye taste from many upstart distilleries in Kentucky. It's fine for 1 pour, but I get tired of that sweet malt profile quickly. If you like it, then there are a treasure trove of cask strength affordable picks in the region.57.98 USD per Bottle -

Reviewed November 8, 2021I can’t even begin to describe this. One of the most unique bourbons I’ve ever tasted. My wife said it had a bacon note to it. I kind of noticed it afterwards. It’s got some burn but I like it.
