Neversink Gin is made from apples grown in a single orchard in New York state.
The apple-based spirit is macerated with juniper berries for 24 hours then distilled through eleven botanicals: juniper, coriander, cardamom, star anise, cinnamon, orris root, angelica root, elderflower, and fresh orange, lemon and grapefruit peels.

In general, this category of gin, while it does contain juniper, places less of an emphasis on this botanical. Other botanicals not classically used in London Dry gins are often utilized and often highlight botanicals grown in the region the gin is produced. "On the nose, Neversink Gin is delicate, without the usual heat from juniper. Instead, mild cardamom and floral notes prevail. There's a similarly delicate feel on the palate that evolves into a slow building heat with more concentrated spice flavors. Though a touch of juniper is present, it's not overbearing, so those who shy away from the London Dry style are likely to enjoy this in everything from a Gin & Tonic or Collins to a modern take on the Martini."
