Cotswolds macerates juniper, coriander and angelica root for 12 hours in a 100% wheat-based neutral spirit. An additional botanical mix with less traditional ingredients like lavender, bay leaf and black pepper is then added to the distillation via vapor-infusion in their bespoke pot-still.
The gin is brought down to proof with water from the Cotswolds in south-central England and bottled at 46% ABV. This is a review of the batch 2/2015.

London Dry GinNeutral spirit flavored with juniper and other botanicals. In the US, the minimum ABV is 40%; In the EU, it is 37.5%. Originally, only made in London, this can be made anywhere. No artificial flavors or colors can be added. Only water, neutral grain spirit, and sugar (no more than 0.1g/l) can be added.

Tasting Notes
"This is suit and tie Dry Gin. The bouquet is brimming with pine needles, cracked pepper, bold juniper, and lots of dried citrus peel. The palate focuses on black pepper and bitter lemon oils. The finish is long lasting with tastes of juniper and licorice. Because of its great concentration this would make a sexy dry Martini or a refreshing Vesper."
